Plant of the Month for August 2023 – Weeds with Benefits
Although a gardener might consider weeds their enemy, some that are commonly found in our gardens have beneficial properties. Instead of seeing them as evil, you might want to know ways they can serve as culinary treats or as medicinal remedies. Hopefully, knowing the benefits of some weeds will increase your respect for them, even if you decide to remove them rather than using or consuming them.

Wrap it up: Summer rolls keep it light — and fresh — on a warm-weather dinner table
If the past few weeks have taught us anything, it’s that the best meals in the dog days of summer come together quickly, without heating up the kitchen.
Hormel’s cultural anthropologist discovers what consumers really eat and why we love Spam
MINNEAPOLIS — Technology has helped food companies look closely at what consumers are buying. But when it comes to what they are actually eating — and why — Tanya Rodriguez is at the table.
Tropical Gardening: Staghorn ferns or false staghorn ferns
Ferns were among the earliest plants and evolved millions of years ago. They were a major part of early forests in the days of the dinosaurs and perhaps the first to come back after the great asteroid event 66 million years ago.

Let’s Talk Food: Fish of Today
When I was growing up, we ate ahi, aku, and whatever we caught when we went fishing. But today, ahi is so expensive and we rarely see aku at the market. In fact, in the past 50 years, cod, swordfish and bluefin tuna have decreased by approximately 90 percent due to overfishing.
Quick Fix: Basque Cod with Salsa Verde features regional flavors
Itasted a real Basque country dinner when sommelier Mikel Garaizabal recently visited Miami. He told me that they only serve fresh ingredients with lots of vegetables and rarely add pasta or rice to the meal. He served a typical dish of fresh cooked cod with a salsa verde. It’s a classic Basque sauce made with garlic, white wine, fish stock and lots of parsley. The fish is sauteed and the sauce is made in the same skillet. So there’s only one pan to clean. I created this quick dinner based on the Basque flavors we enjoyed.
This 3-ingredient ice cream recipe instantly transports me 2,779 miles away
When I think about my mami, 2,779 miles away in Ecuador, the kitchen is the last place I imagine her. Her petite frame, dressed in elegant tailor-made suits and stiletto heels, has never screamed “homemaker.” Yet, one of her recipes managed to sneak into every important moment of our lives: homemade raspberry ice cream.
Gretchen’s table: Summer fruit galette brings bright summer flavor
Summer desserts should look and taste exactly like the season: bursting with color and full of fresh, sunny flavor. The best ones are also super easy to make, with ingredients that are easy to find in either the supermarket or farmers market, and not wickedly expensive.
Tropical Gardening: Malaria outbreaks in Florida and Texas alert us about disease danger
Malaria, COVID and other diseases are scary. However, it is even scarier when you realize how vulnerable we are when it comes to problems caused by rats, pigs, insects and diseases we find in Hawaii. Pig and rat populations carry diseases that can cause human illnesses.
Volcano Watch: Halema‘uma‘u’s 1967-68 eruption: another crater-filler
Kilauea’s activity from 2018 until now has been compared to cycles of summit collapse and refilling prior to 1924. However, Kilauea also exhibited similar behavior during the 1967-68 Halema‘uma‘u eruption.
From anise to zinnia, your summer dishes just got prettier
Pansies are among the most common edible flowers and can be found on everything from charcuterie boards to salad.
Quick Fix: Thai Lamb Satay takes little effort with premade peanut sauce
Ilove lamb satay with a spicy peanut sauce but didn’t want to take the time to make my own sauce. So I was delighted to find a bottle of the sauce at the market. This meant that I could make the satay with very little effort. The lamb only cooks for about 10 minutes on two skewers. Tender lamb cubes cut from the leg of lamb are perfect for this recipe. If you use other cuts of lamb, let them marinate for about 5 minutes longer.
Let’s Talk Food: Changes in downtown San Francisco
Downtown San Francisco was once a favorite place for us to visit, even for just a few days. We could shop and dine, all walking distance from our hotel. But the national problem of homelessness, compounded by the pandemic, has changed the area dramatically. My son was working in Oakland recently and wanted to check out downtown San Francisco when he had some time off. He was advised not to go as it would be dangerous with the homeless situation and not the same as he remembered.
